Ciro Oliva has brought all the colors and aromas of Rione Sanità to Capri at Palazzo Canale, focusing on a pizza made “with only the best” and the close connection with the arts and culture of his native Naples.
There’s an expression in Naples that sounds like a promise: “Get used to miracles.” It’s the mantra of Ciro Oliva, a pizza genius who managed to transform a neighborhood story into a true miracle.
That miracle, tied to the quintessential Italian way of life, arrived in Capri in 2025, where Ciro’s father, Antonio Oliva, welcomes guests and turns this place not just a restaurant, but a piece of history to be experienced.
Fatte ‘na pizza c’a pummarola ‘ncoppa, vedrai che il mondo poi ti sorriderà.
(Pino Daniele)
A story of family and devotion
The story of Concettina ai Tre Santi began in 1951, when Concettina, Antonio Oliva’s wife, decided to make fried pizzas outside her “basso” (a small neighborhood restaurant). The pizzas were so good that her first savings allowed her to open the pizzeria right where it still stands today in Naples.
The name itself, “Tre Santi,” is a tribute to the neighborhood’s faith and protection: the restaurant opened next to the votive shrine of San Vincenzo Ferrari (patron saint of Sanità), Sant’Alfonso Maria de’ Liguori, and Sant’Anna. It was here that Ciro, the fourth generation of a dynasty of pizza makers, grew up, breathing in the art of flour and the desire to make Rione Sanità known and loved throughout the world.
Concettina’s Dolce Vita in Capri
In Capri, Concettina is located inside Palazzo Canale, just meters from the famous Piazzetta, with a splendid sea view and decorated with all the symbols dear to Ciro, from colorful ceramics to effigies of Maradona and San Gennaro.
The Gastronomic Experience
Ciro Oliva’s philosophy remains unchanged: “only the best”. Every ingredient is an obsessive pursuit of excellence, from Slow Food Presidia to Agerola dairy products naturally acidified for 12 hours.
– The Tasting Menu: The renowned tasting menu is a journey through the house’s icons, from Montanarina (fried to perfection and incredibly light) to San Gennaro pizza, served “with or without a miracle” (red or white).
– Signature Capri: There’s no shortage of tributes to the island, with the use of sfusato lemons and aromas of the Mediterranean scrub paired with a wine list featuring Champagne and volcanic whites from the Phlegraean Fields.
Concettina ai Tre Santi isn’t just the story of one of the best pizzas in Naples (and now Capri), but above all, it’s the tale of someone who made it and wanted to share their success, doing good, with their people.
The Secret
If you try the pizza in Capri, compared to Sanità, you’ll notice a slightly more pronounced crispiness, specifically designed to counteract the iodine in the island air. It’s a “maritime” pizza, created to be enjoyed overlooking the sea, but with its heart planted in the tuff stone of Sanità.
